今儿个立夏,天儿明显热起来了,人也跟着没精神,食欲都差了。老家老人常说“立夏吃4黄,不用医生帮”,说的是4种带“黄”字的家常菜,都是应季又实惠的食材,做起来简单,吃完浑身得劲儿,尤其养脾胃、补气血,夏天少生病。

一、黄甘蔗红枣水

甘蔗咱都知道,咬一口甜津津、水汪汪的,夏天口干舌燥时来一杯,比喝冰水舒服多了!它能清热润肺,尤其是刚入夏有点上火、嗓子干疼的人,喝几天就明显好转。



详细做法:

1. 买甘蔗时让老板切成小段(自己砍太费劲),回家用钢丝球把外皮刷干净,砍成3厘米长的小段(别太短,煮的时候容易散)。

2. 红枣10颗左右,用剪刀把核去掉(带核煮容易上火),记得用温水泡5分钟,把褶皱里的灰洗干净。

3. 锅里加1000毫升水(差不多4碗),先放甘蔗段,大火煮开后转小火煮15分钟,再放红枣,接着煮10分钟。关火后别急着喝,焖5分钟更甜。

二、黄瓜炒虾仁

黄瓜是夏天的“刮油菜”,水分多、纤维足,吃着清爽还能通便。天热没胃口时,来盘这菜,酸甜脆嫩,能多扒两口饭。

2. 虾仁200克,去掉虾线(用牙签在虾背第二节挑出来),用厨房纸吸干水分,加1勺料酒、半勺盐、1勺淀粉,抓匀腌3分钟。

3. 锅里放2勺油,油热后放3瓣蒜末爆香,先下虾仁炒到变色蜷起来(大概1分钟),马上盛出来。

4. 锅里再补半勺油,下黄瓜片,辣椒,大火炒1分钟,加半勺糖、半勺生抽调味,然后把虾仁倒回去,翻炒均匀就出锅。

三、黄豆芽炖肉

黄豆发芽后,营养翻倍!维生素C含量暴增,夏天容易口腔溃疡、牙龈出血的人,多吃点准没错。而且豆芽里的纤维更软乎,比黄豆好消化,特别适合脾胃弱的人。搭配五花肉一起炖,豆芽吸饱了肉香,五花肉也不腻了,妥妥的下饭神器。



详细做法:

1. 黄豆芽200克,放水里洗两遍,把豆皮搓掉(不然煮出来汤浑浊),沥干水备用。

2. 五花肉300克,切成3厘米见方的块(别切太小,炖完会缩水),冷水下锅,加2片姜、1勺料酒,煮开后撇去浮沫,捞出肉块用温水洗干净。

3. 加1勺生抽、半勺老抽、3片姜、2颗八角、1段桂皮,翻炒出香味,然后加开水没过肉(一定加热水,不然肉会柴),大火烧开后转小火炖20分钟。

4. 放入黄豆芽,加半勺盐,接着炖15分钟,直到豆芽和肉都软烂,开大火收收汁,汤汁浓稠就关火。

四、黄豆炖排骨

立夏后阳气上升,人容易累、没劲儿,喝点骨头汤能补气血。黄豆和排骨简直是“黄金搭档”!黄豆里的钙和排骨里的胶原蛋白结合,喝起来浓油赤酱的,补钙又滋补,尤其适合老人小孩和刚生完孩子的女人。夏天空调房里待久了,喝一碗热乎的汤,浑身都舒服。



详细做法:

1. 黄豆100克,提前泡4个小时(泡发后炖起来容易烂),要是赶时间,用热水泡1小时也行。

2. 排骨500克,剁成小块,冷水下锅,加2勺料酒、3片姜,煮开后撇净血沫,捞出用温水冲干净。

3. 锅里放1勺油,加葱段、姜片、2颗花椒炒香,放入排骨翻炒2分钟,加1勺生抽、半勺老抽,继续炒到排骨上色。

4. 把泡好的黄豆连水一起倒进锅里(水别倒太多,刚好没过排骨就行),再加2颗蜜枣(增加甜味,不爱吃甜的可以不放),大火烧开后转砂锅(没有砂锅就用铁锅),小火炖1小时。

5. 炖到排骨能用筷子轻松扎透,加半勺盐、少许白胡椒粉调味,再煮5分钟,撒点葱花就出锅。
