DuangDuang的弹古早蛋糕的做法
- 把蛋黄、蛋清分离,蛋清要放在无油无水的干净容器中。
- 11寸烤盘里放入叠好的油纸。
- 油倒入小锅中加热到70度,我拍照的时候温度下降了一点点,70度左右是没问题的。
- 油温达到70度的时候,把低筋面粉筛入热油中,一边筛一遍搅拌。
- 油与面粉混合均与后分次加入牛奶,搅拌均匀。
- 加入牛奶之后再把蛋黄分两次加入到面糊中,用手动打蛋器搅拌均匀。
- 把蛋黄糊搅拌到无颗粒状态备用。如图。
- 接下来打发蛋白,在蛋白中滴入柠檬汁,用电动打蛋器打到密集大泡泡时(如图)分三次加入细砂糖。
- 把蛋白打到提起打蛋器有弯弯钩就可以了。
- 把打发好的蛋白分三次加入到蛋黄糊中,前两次把蛋白加到蛋黄糊里用刮刀翻拌均匀,第三次是把翻拌均匀的面糊再倒入到剩余的蛋白中,继续翻拌均匀。
- 翻拌均匀的状态如图,把拌匀的蛋糕糊倒入铺好油纸的模具中。
- 用刮刀抹平一些,震荡出大气泡。
- 烤箱提前预热,烤盘中放2厘米清水,把装有蛋糕糊的模具放入水中(活底模具要抱上锡纸)上下火150度烤60分钟,中途颜色过深可盖上锡纸。

小贴士
1、装蛋清的盆要干净,无水无油,打蛋器也要干净的,无水无油,否则影响蛋清打发。
2、油温一定要控制在70-80度之间。
3、如果用的是活底模具,放入水中之前一定用锡纸包住模具底部,防止进水。
