大家好,我是梅子,今天分享给大家一个南瓜发糕的做法,全程手不沾面,筷子搅一搅,就能成功,香甜松软,口感像面包特别的好吃。



准备一块南瓜,去皮之前是一斤一两,先将外皮和瓤给它去掉,清洗干净,然后改刀切成薄片,装入盆中,放入锅中给它蒸熟蒸透。

大概15分钟,把蒸好的南瓜将它取出,加入20克白糖,快速的给它摁碎,最后怼成细细的南瓜泥,晾至微凉不烫手的时候打入三个鸡蛋,加四克酵母,1克无铝泡打粉,顺着一个方向将它们搅匀。



接着再分次少量的倒入400克的面粉,给它顺着一个方向不停的搅拌,刚开始不太容易搅匀,我们可以给它搅成团以后静置五分钟。五分钟后,我们接着搅,这时候很容易就将它搅的表面特别光滑了,就像这样特别的有弹性,这一步一定要多搅动一会儿,之后扣上保鲜袋发酵至体积的1倍大。



利用这期间准备一把红枣少许的葡萄干,给它放入淡盐水中,清洗干净之后改刀切碎备用,然后再准备一个容器,在底部和边部涂抹一点食用油,将切碎的葡萄干和红枣均匀的撒在底部。

大概35分钟,这个面团体积明显发大了一倍,说明已经发酵好,将它搅匀排气,之后倒入容器中,轻轻的给它摇晃摇晃,让它表面平整,之后再拿起震荡几下,将里面的气泡给它震荡出来,再次扣上保鲜袋,醒发15分钟。



时间到后,我们打开保鲜膜,可以看见明显体积变大,说明二次醒发的很好,将它凉水放入锅中,水开以后计时蒸45分钟,记住全程一定要中大火,关火五分钟后再开盖将它取出。
