鸡腿豆角焖面(焖面入味且不黏糊的秘诀)的做法

  1. 食材如图。豆芽要用黄豆芽而不是绿豆芽。豆角用四季豆、扁豆都可以。
  2. 要想做出来的焖面不黏糊,面条选择很重要。最好用鲜面条,去买的时候选择棍棍面、炒面,都比较合适。



  1. 鸡腿斩大块,放入葱段、姜片,再加入2勺料酒、2勺生抽、1勺老抽、2勺蚝油,搅拌均匀,腌制20分钟。(勺子用家用不锈钢餐勺,一勺约7ml)



  1. 切配菜。豆芽去老根,豆角胡萝卜切段,土豆切小片。



  1. 烧一锅开水,放入土豆煮熟捞出。土豆容易煮融化,所以咱们先处理一下,不跟其他配菜一起焖。



  1. 准备一口厚炒锅,倒入比平时炒菜多一点的油,油热后大火将鸡腿炒至变色,放入豆角、胡萝卜翻炒几下。



  1. 调入4-5勺生抽、1勺老抽、半勺盐,倒入和食材齐平的清水。(调料根据配菜的量加减,宁可调咸一点也别淡了)



  1. 大火将汤汁煮开,盛出一半的汤汁备用,锅里留一半。



  1. 将豆芽和面条平铺在配菜上,均匀淋入刚才盛出的汤汁,盖上盖子,转小火焖5分钟。
    注意,如果买的鲜面条上有很多面粉,入锅前务必抖掉,否则会黏糊。淋汤汁的时候不要一次全倒进去,可以先淋少量,焖的过程中随时观察随时加汤汁。



  1. 5-8分钟后用筷子将面条抖散、翻匀,使得每一根都均匀上色。再盖盖子焖几分钟。撒蒜末和煮好的土豆片拌匀即可。

小贴士

-配菜除了菜谱上列的,还可以选芹菜、蒜苔、菜花。
-根据我多次做焖面的经验,买面的时候直接告诉摊主:要炒面用的面。炒面的面熟得快,可以很好地避免夹生糊锅,而且不会黏黏糊糊的。
-焖面的过程中,务必小火加盖,随时观察,以免糊锅。
